These flavorful sweet chili noodles feature tender noodles and ground chicken in a sweet and spicy chili sauce, making them a perfect dish for a busy weeknight.

Ingredients

For the Noodles:

  • 1 tablespoon sesame oil
  • 9 oz ramen or rice noodles, cooked according to package instructions

For the Chicken:

  • 1 lb ground chicken
  • 1 bunch green onions, white parts finely minced and green parts cut into 1-inch pieces
  • 2 medium cloves garlic, minced
  • 1 tablespoon grated fresh ginger

For the Sauce:

  • 3/4 cup sweet chili sauce
  • 2 tablespoons light brown sugar
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar

For Topping:

  • Sesame seeds
  • Red pepper flakes

Instructions

  1. Cook the Chicken: Heat a skillet, add sesame oil, cook ground chicken and white parts of onion until no longer pink.
  2. Add Flavors: Add garlic, ginger, and green parts of green onion; cook until fragrant.
  3. Prepare the Sauce: Combine chili sauce, brown sugar, soy sauce, and rice vinegar.
  4. Finish Dish: Toss sauce and noodles into chicken, cook until bubbly and coated in sauce.
