Cheesy Ground Beef and Potato Bake is a comforting and hearty casserole that combines layers of tender potatoes, seasoned ground beef, creamy sauce, and melted cheddar cheese. This easy-to-make dish is perfect for a family dinner or potluck.

Ingredients

Potato Layer:

  • 4 lbs russet potatoes, peeled and sliced

Beef Layer:

  • 1 lb ground beef
  • 1 onion, diced

Sauce:

  • 1 can cream of chicken soup (10 oz)
  • 1 can evaporated milk (12 oz)
  • 1/2 cup milk
  • 2 teaspoons salt, divided
  • 1 teaspoon pepper, divided
  • 2 teaspoons onion powder

Additional:

  • 4 cups cheddar cheese, shredded

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Brown Beef: In a skillet, brown the ground beef, diced onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper over medium heat. Drain and set aside.
  3. Prepare Sauce: Whisk together cream of chicken soup, evaporated milk, milk, 1 teaspoon salt, 1/4 teaspoon pepper, and onion powder.
  4. Layer Ingredients: In a greased 9×13″ baking dish, layer potatoes, beef, and cheese three times. Season each layer with salt and pepper.
  5. Add Sauce: Pour the milk mixture over the layers.
  6. Bake Covered: Cover with foil and bake for 1 hour.
  7. Melt Cheese: Uncover, add remaining cheese, and bake for 5 more minutes.
  8. Rest and Serve: Let it sit for 15 minutes before serving.
