Ingredients

Chicken:

  • 2 boneless, skinless chicken breasts (halved lengthwise to make 4 thin cutlets)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Other Ingredients:

  • ½ cup BBQ sauce (plus extra for serving)
  • 4 slices mozzarella cheese (or 1 cup shredded)
  • 4 brioche or ciabatta buns (toasted)
  • 2 tbsp olive oil (for grilling)
  • Optional toppings: Sliced red onion, pickles, avocado, or coleslaw

Instructions

  1. Prep the Chicken: Pound chicken breasts to ½-inch thickness (or halve them lengthwise for even cooking). Season with garlic powder, smoked paprika, salt, and pepper.
  2. Grill the Chicken: Heat grill or skillet to medium-high and brush with olive oil. Grill chicken for 4-5 minutes per side until internal temp reaches 165°F (74°C). During the last minute, brush generously with BBQ sauce and top with mozzarella. Cover to melt cheese.
  3. Toast the Buns: Lightly butter buns and grill until golden (or toast in a pan).
  4. Assemble Sandwiches: Spread extra BBQ sauce on buns, then layer with chicken, cheese, and toppings like red onion or coleslaw.
  5. Serve Immediately!
