Cake Batter

  • 2 Large eggs, at room temperature
  • 3/4 cup (180g) Milk, at room temperature
  • 1/3 cup (75g) Vegetable oil (any flavorless, such as canola, corn, sunflower)
  • 1/4 cup (60g) Freshly squeezed lime juice
  • 1 Tbsp Lime zest
  • 2 Tbsp (24g) Lime flavored gelatin powder
  • 1 1/2 cups (180g) All-purpose flour
  • 3/4 cup (150g) Granulated sugar
  • 2 tsp (8g) Baking powder
  • 1/4 tsp (1g) Salt

Lime Topping

  • 1 1/3 cups (397g) Sweetened Condensed Milk
  • 1/3 cup (80g) Freshly squeezed lime juice
  • 1 Tbsp (12g) Lime flavored gelatin powder
  • 2 Tbsp (30g) Hot water

Instructions

  1. Prepare the Pan: Line an 8-inch (20cm) square pan with parchment paper and set it aside to ensure easy removal of the cake later.
  2. Preheat Oven: Preheat your oven to 350°F (180°C) for about 5 minutes before baking, ensuring it reaches the correct temperature.
  3. Mix Eggs: Crack the eggs into a large bowl and whisk vigorously for about 1 minute until they are slightly frothy.
  4. Add Wet Ingredients: Add the milk, vegetable oil, lime juice, lime zest, and lime flavored gelatin powder to the eggs. Whisk together until the mixture is smooth and well combined.
  5. Add Dry Ingredients: Sift together the flour, granulated sugar, baking powder, and salt directly over the wet mixture. Gently whisk until just combined and smooth, being careful not to overmix to keep the cake tender.
  6. Test Baking Powder (Optional): To ensure the baking powder is fresh and effective, sprinkle 1/2 teaspoon into a glass of warm water. If it fizzes and bubbles, it’s good to use.
