Greek Lemon Rice is a bright and aromatic Mediterranean side dish made with long-grain rice, fresh lemon juice and zest, garlic, onion, broth, and herbs. It’s fluffy, flavorful, and perfect alongside grilled meats or seafood.

Ingredients

  • 1 cup long-grain white rice or basmati
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley or dill
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Heat olive oil in a large saucepan over medium heat. Add diced onion and minced garlic, cooking until softened and fragrant.
  3. Stir in the rinsed rice and toast for 1-2 minutes, allowing it to absorb the oil and develop a nutty aroma.
  4. Add chicken or vegetable broth, lemon juice, and lemon zest. Stir to combine and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes.
  7. Fluff the rice with a fork and stir in chopped fresh herbs. Season with salt and pepper to taste.

Notes

  • Use vegetable broth for a vegetarian version.
  • Brown rice can be used, but adjust liquid and cooking time accordingly.
  • Great with additions like grilled chicken, shrimp, or chickpeas.
  • To reheat, add a splash of broth or water to retain moisture.
