Ingredients

For the Chicken:

  • 1 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup dry white wine

  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 can (14 oz/400 g) cherry tomatoes or crushed tomatoes
  • 3 tbsp chopped basil leaves

For Assembly:

  • 2 mozzarella balls, chopped
  • 3 tbsp grated Parmesan
  • Crushed red pepper flakes for sprinkling

Instructions

  1. Prep the Ingredients: Mince garlic, chop shallot, and cube mozzarella.
  2. Season the Chicken: Season chicken fillets with salt, pepper, garlic powder, and paprika.
  3. Cook the Chicken: Brown chicken fillets in a skillet, then set aside.
  4. Make the Tomato Sauce: Cook garlic, shallot, and spices, then add wine, tomato paste, broth, and tomatoes.
  5. Finish the Dish: Add chicken back to the skillet, top with basil, mozzarella, and Parmesan. Simmer until cheese melts.
