Ingredients

Granola Base

  • 1 tsp vanilla extract

Filling and Topping

  • 1 1/2 cups Greek yogurt (preferably full-fat for creaminess)
  • Berries of choice for topping (such as blueberries, raspberries, or strawberries)

Instructions

  1. Prepare the Granola Dough: In a medium bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir thoroughly until the mixture forms a sticky dough. If it feels too dry, gradually add more almond butter and honey to achieve the right consistency.
  2. Form the Granola Cups: Line a muffin pan with muffin liners. Spoon a portion of the granola dough into the bottom of each lined muffin cup. Use your fingers or the back of a spoon to press the mixture firmly, creating a sturdy and compact base layer.
  3. Assemble the Yogurt Cups: Spoon a generous amount of Greek yogurt on top of each granola base. Then, add fresh berries on top of the yogurt. If there is any leftover granola dough, sprinkle it over the berries for extra crunch.
  4. Freeze to Set: Place the muffin pan in the freezer and allow the granola cups to set for at least 4 hours. Before serving, remove from the freezer and let them thaw slightly so they are easier to eat.
