A refreshing twist on the classic Caprese salad, this Fresh Cucumber Caprese Salad is a delightful combination of crisp cucumber, juicy cherry tomatoes, creamy mozzarella, and a zesty herb-infused marinade.

Ingredients

    Marinade

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch of salt
  • Pinch of pepper
  • Salad

  • 1 cucumber, peeled, fork-scored, thinly sliced, then diced
  • 1½ cups cherry tomatoes, quartered
  • 8 oz fresh mozzarella, sliced or pearl-sized
  • ½ large red onion, chopped
  • Optional: fresh basil leaves

Instructions

  1. Prepare the Marinade: In a small bowl, combine olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Mix well and set aside.
  2. Prepare the Salad: Peel and dice the cucumber. Quarter the cherry tomatoes. Chop the red onion. Slice or prepare the mozzarella. Combine all vegetables and cheese in a bowl.
  3. Combine and Serve: Pour the marinade over the salad mixture. Toss gently to coat everything. Allow the salad to rest for 10 minutes before serving.
