Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts or thighs

Caramelized Onions:

  • 2 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil

Rice Mixture:

  • 1 1/2 cups long-grain white rice (uncooked)
  • 2 1/2 cups beef or chicken broth
  • 1 can (10.5 oz) French onion soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste

Toppings:

  • 1 1/2 cups shredded Gruyère or Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Caramelize the Onions: In a skillet, cook onions in butter and olive oil until caramelized.
  3. Prepare the Rice: Mix rice, broth, French onion soup, Worcestershire sauce, and seasonings in a bowl.
  4. Assemble the Casserole: Spread rice mixture in dish, top with chicken, season, and add caramelized onions.
