Ingredients

Dry Ingredients

  • 1 1/2 Cups / 190g Flour
  • 4 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 Tbsp Sugar (optional)

Wet Ingredients

  • 1 Egg
  • 1 1/4 Cups / 300ml Milk
  • 1/4 Cup / 60g Melted Butter
  • 1/2 tsp Vanilla Extract

Instructions

  1. Combine Dry Ingredients: In a large bowl, add the flour, baking powder, salt, and sugar. Whisk or stir together thoroughly to ensure even distribution of leavening agents and seasoning.
  2. Prepare Wet Mixture: In a smaller bowl, crack the egg, then pour in the milk and vanilla extract. Whisk gently until combined.
  3. Add Melted Butter: Melt the butter in the microwave or on low heat stove-top. Add the melted butter to the wet ingredients and mix well with a fork or whisk.
  4. Combine Batter: Make a well in the dry ingredients and pour in the wet mixture. Fold together gently with a wooden spoon until no dry flour remains but with some small lumps to prevent overmixing which can toughen the pancakes.
  5. Preheat Skillet: Heat a heavy-based frypan or cast iron skillet over medium-low heat. Add a knob of butter and allow it to melt fully, coating the pan.
  6. Cook Pancakes: Measure out approximately ⅓ cup of batter and pour onto the skillet, allowing it to spread naturally. Cook for 2-3 minutes until edges set and bubbles form on the surface.
  7. Flip Pancakes: Use a spatula to carefully flip the pancake and cook for an additional 2-3 minutes until golden and cooked through.
  8. Repeat Cooking: Continue cooking the remaining batter using the same method, adding more butter to the pan as needed.
