Ingredients

  • 1 cup mayonnaise

  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese

Seasonings:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste

Additional Mix-ins:

  • ½ cup chopped green onions

Instructions

  1. Prepare the Corn: If using fresh corn, cut kernels off the cob. For canned corn, drain and rinse it. If using frozen corn, thaw and drain excess moisture.
  2. Mix the Creamy Base: In a large bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Add Cheese and Seasonings: Stir in cheddar cheese, pepper jack cheese, garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper.
  4. Include Mix-ins: Fold in corn, green onions, red bell pepper, jalapeño, and cilantro if desired.
