Ingredients

For the Taco Meat:

  • 1 tbsp olive oil
  • lb ground beef
  • ¾ cups diced yellow onion
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 oz taco seasoning
  • 20 oz cans Rotel Original
  • 3 tbsp chopped fresh cilantro

For the Spaghetti:

  • 1 lb dried spaghetti noodles
  • 2 cups beef broth
  • 8 oz sharp cheddar cheese

Instructions

  1. Taco Meat: In a large skillet, heat olive oil over medium heat. Add ground beef, onion, salt, and pepper. Cook until beef is browned, breaking it up with a spoon.
  2. Add taco seasoning, Rotel, and cilantro. Simmer for 10 minutes.
  3. Spaghetti: Cook spaghetti according to package instructions. Drain.
  4. In the same skillet used for the taco meat, add beef broth and cooked spaghetti. Stir to combine.
  5. Top with cheddar cheese. Cover and let it sit for a few minutes until the cheese melts.
  6. Serve hot and enjoy!
