  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 teaspoon sugar
  • ¾ cup warm water (about 100°F / 38°C)
  • 2 cups all-purpose flour (plus extra for dusting)
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Activate Yeast: In a small bowl, combine warm water, yeast, and sugar. Let sit 5–10 minutes until bubbly.
  2. Mix Dough: In a mixing bowl, whisk together flour and salt. Add yeast mixture and olive oil. Mix until a rough dough forms.
  3. Knead: Knead on a floured surface for 5–7 minutes until soft and elastic.
  4. Rise: Place in a greased bowl, cover, and let rise for about 1 hour until doubled.
  5. Shape Pitas: Punch down the dough and divide into 6–8 balls. Flatten each into a ¼-inch thick circle.
  6. Cook: Heat a heavy pan or cast iron skillet on medium-high. Place one pita at a time into the skillet and cook 1–2 minutes per side until puffed and golden.
  7. Serve: Keep warm in a kitchen towel.
