Moist Hummingbird Bread with Heavenly Cinnamon Cream Cheese Frosting combines tropical bananas, pineapple & coconut. Easy one-bowl recipe perfect for any occasion!

Ingredients

For the Bread:

  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1/4 cup canola or vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup diced pineapple, patted dry
  • 1/2 cup chopped pecans

For the Heavenly Cinnamon Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 23 tablespoons milk or heavy cream

Instructions

  1. How to Make Hummingbird Bread
    Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan thoroughly. Line with parchment paper for easy removal, leaving some overhang for easy lifting.
  2. Mash the bananas in a large mixing bowl until mostly smooth. Whisk in sugars, egg, and oil until smooth and glossy.
  3. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Fold dry ingredients into wet mixture.
  4. Fold in coconut, pineapple, and pecans. Pour batter into pan and bake for 55-65 minutes.
