This Easy Graham Cracker Toffee recipe combines the crunch of graham crackers with a buttery toffee topping and a sprinkle of chocolate chips for a simple yet irresistible treat.

Ingredients

Graham Cracker Toffee:

  • 2 sleeves graham crackers
  • 1 ¼ cups butter (2 ½ sticks)
  • 1 ¼ cups brown sugar
  • 2 ½ cups chopped pecans
  • 1 teaspoon vanilla extract
  • ¾ cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Arrange graham crackers in a single layer on a parchment-lined or silicone mat–lined baking sheet.
  2. In a medium saucepan, melt butter over medium heat. Add brown sugar and cook until bubbling. Boil for 2 minutes, stirring constantly. Remove from heat and stir in vanilla and chopped pecans.
  3. Carefully pour the hot pecan toffee over the graham crackers and spread evenly with a spatula.
  4. Bake at 350°F for 10 minutes.
  5. Remove from oven and sprinkle with mini chocolate chips. Let cool on the baking sheet for 1 hour or until firm.
