Ingredients
Garlic Butter Chicken Bites:
1¼ lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 teaspoon Italian seasoning
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
⅛ teaspoon paprika
1 tablespoon olive oil
3 tablespoons unsalted butter, divided
1½ tablespoons minced fresh garlic (4 cloves)
2 tablespoons finely chopped fresh parsley
Spaghetti Aglio e Olio With Kale and Blistered Tomatoes:
12 oz spaghetti
1 large bunch lacinato kale, destemmed and chopped
5 cloves garlic, thinly sliced
1 teaspoon red pepper flakes
¼ cup extra virgin olive oil + 1 tablespoon
1 cup reserved pasta water
Parmesan for serving
1 pint cherry or grape tomatoes
Instructions
Toss chicken with seasonings: In a bowl, coat the chicken pieces with Italian seasoning, salt, pepper, and paprika.
Cook chicken: Heat olive oil and 1 tablespoon of butter in a skillet. Cook chicken in batches until golden brown.
Add garlic and parsley: Add remaining butter, garlic, and parsley. Simmer until chicken is cooked through.
Prepare spaghetti: Cook spaghetti and kale in boiling water. Reserve 1 cup of pasta water.
Make garlic oil: In a pot, cook garlic, red pepper flakes, and olive oil. Add cooked pasta and kale.
Serve: Top pasta with Parmesan. Cook tomatoes in olive oil until blistered.
