Delicious and easy-to-make garlic butter chicken bites paired with spaghetti aglio e olio with kale and blistered tomatoes. This flavorful dish is perfect for a quick weeknight dinner.

Ingredients

Garlic Butter Chicken Bites:

  • lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon paprika
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter, divided
  • 1½ tablespoons minced fresh garlic (4 cloves)
  • 2 tablespoons finely chopped fresh parsley

Spaghetti Aglio e Olio With Kale and Blistered Tomatoes:

  • 12 oz spaghetti
  • 1 large bunch lacinato kale, destemmed and chopped
  • 5 cloves garlic, thinly sliced
  • 1 teaspoon red pepper flakes
  • ¼ cup extra virgin olive oil + 1 tablespoon
  • 1 cup reserved pasta water
  • Parmesan for serving
  • 1 pint cherry or grape tomatoes

Instructions

  1. Toss chicken with seasonings: In a bowl, coat the chicken pieces with Italian seasoning, salt, pepper, and paprika.
  2. Cook chicken: Heat olive oil and 1 tablespoon of butter in a skillet. Cook chicken in batches until golden brown.
  3. Add garlic and parsley: Add remaining butter, garlic, and parsley. Simmer until chicken is cooked through.
  4. Prepare spaghetti: Cook spaghetti and kale in boiling water. Reserve 1 cup of pasta water.
  5. Make garlic oil: In a pot, cook garlic, red pepper flakes, and olive oil. Add cooked pasta and kale.
  6. Serve: Top pasta with Parmesan. Cook tomatoes in olive oil until blistered.
