Ingredients

Cooked Jasmine Rice:

  • 2 cups cold & day-old (or any white long grain rice)

Green Onion:

  • 1, finely chopped

Soy Sauce:

  • 2.5 tablespoons regular or light soy sauce (avoid dark soy sauce)

Sesame Oil:

  • ½ tablespoon

Eggs:

  • 4 large eggs, beaten

Vegetable Oil:

  • 2 tablespoons vegetable oil or any neutral oil

Instructions

  1. Heat oil: Heat vegetable oil in a large pan or wok. For a wok, allow the oil to smoke; for a normal pan, no need to smoke the oil.
  2. Add eggs: Pour in beaten eggs and quickly stir-fry until they take shape but remain moist.
  3. Combine rice and eggs: Toss in rice, breaking apart any clumps. Move everything to one side of the pan.
  4. Add green onions: In the empty space, add remaining oil and green onions. Mix them into the rice and eggs.
  5. Season: Along the edges of the pan, add soy sauce and sesame oil. Toss until grains are browned. Remove from heat and serve hot.
