This Easy Creamy Lasagna Soup is a delightful twist on traditional lasagna, featuring a rich and flavorful broth filled with ground beef, Italian herbs, and lasagna noodles, all topped with a creamy blend of cheeses for a comforting soup that’s ready in no time. Ingredients

Soup

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 pound ground beef (80/20)
  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (more for desired consistency)
  • 2 teaspoons kosher salt, divided
  • 12 lasagna noodles, uncooked and broken into 2” pieces
  • ½ cup heavy cream (optional)

Garnishes

  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated parmesan cheese
  • ½ cup ricotta cheese
  • 6 tbsp fresh basil, finely chopped

Instructions

  1. Heat the olive oil in a large pot or dutch oven. Add diced onion and cook until soft. Add ground beef and sauté until browned. Stir in garlic, red pepper flakes, 1 teaspoon of kosher salt, oregano, and tomato paste.
  2. Add tomato sauce, diced tomatoes, and chicken broth. Bring to a boil. Add broken lasagna noodles and remaining kosher salt. Simmer until noodles are tender.
  3. Stir in heavy cream. For a thinner soup, add extra chicken broth. Optionally, mix in shredded mozzarella or parmesan cheese for extra creaminess.
  4. Serve the lasagna soup in bowls and top with ricotta, mozzarella, parmesan, and fresh basil.

Notes

  • What kind of pasta noodles should I use? Dried lasagna noodles are recommended over oven-ready noodles which can become too soft. Any preferred long or short pasta can be substituted if needed.
