These easy bean and cheese enchiladas bring bold Mexican flavors to your table in just 40 minutes. Ingredients

Tortillas:

  • 8 tortillas (corn or flour)

Bean Filling:

  • 2 cups refried beans or mashed black beans

Cheese:

  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Enchilada Sauce:

  • 2 cups enchilada sauce (red or green)

Optional Additions:

  • 1/4 cup diced onions
  • 1/4 cup chopped cilantro

Greasing:

  • 1 tablespoon oil for greasing the dish

Instructions

  1. Preheat and Prep: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Filling: Mix refried beans with 1/4 cup enchilada sauce. Add onions and cilantro if desired.
  3. Assemble the Enchiladas: Warm tortillas, fill with bean mixture and cheese, roll tightly, and place seam-side down in the baking dish.
