Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

Wet Ingredients:

  • ½ cup unsalted butter, melted (or neutral oil)
  • 1 cup brown sugar (or white sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed very ripe bananas (about 23 bananas)
  • ½ cup sour cream or Greek yogurt

Additions:

  • 1 1/2 cup semisweet or dark chocolate chips

Instructions

  1. Preheat oven & prepare pan. Heat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix dry ingredients. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. Mix wet ingredients. In a large bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla, mixing well. Stir in mashed bananas and sour cream.
  4. Combine. Gently fold dry ingredients into wet until just combined. Do not overmix. Stir in most of the chocolate chips, reserving a handful for the top.
  5. Bake. Pour batter into prepared pan, smooth the top, and sprinkle with remaining chocolate chips. Bake 55–65 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.
  6. Cool & serve. Allow to cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  7. Slice and enjoy!
