Dill Pickle Pasta Salad Delight is a tangy and creamy pasta salad featuring elbow pasta tossed with dill pickle juice, sharp cheddar cheese, sliced dill pickles, fresh dill, and a zesty mayonnaise-based dressing with a hint of Sriracha for a subtle kick. Ingredients

Pasta and Pickle Base

  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice (straight from the jar)
  • 1 cup sliced dill pickles

Cheese and Herbs

  • 1 cup cheddar cheese, small diced
  • 3 tablespoons fresh dill, chopped
  • 3 tablespoons white onion, finely chopped
  • 1 tablespoon fresh dill, chopped (for garnish)

Dressing

  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice (straight from the jar)
  • 1/4 teaspoon Sriracha (or other hot sauce)
  • Salt, to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta: Boil the elbow pasta according to the package directions until just al dente. Drain and rinse under cold water to stop cooking and remove excess starch. Drain thoroughly to prevent sogginess.
  2. Marinate pasta in pickle juice: Place the rinsed pasta in a mixing bowl and add half the dill pickle juice. Let it sit for 5 minutes to absorb the flavor, then drain well.
  3. Prepare the dressing: In a separate bowl, whisk together mayonnaise, sour cream, the remaining 1/4 cup dill pickle juice, Sriracha, salt, and black pepper until smooth and well combined.
  4. Combine salad ingredients: In a large serving bowl, add the marinated pasta, diced cheddar cheese, sliced dill pickles, chopped fresh dill, and finely chopped onion. Pour the prepared dressing over the salad and toss gently until everything is evenly coated.
  5. Chill and serve: Cover the salad and refrigerate for 4 to 6 hours to allow the flavors to meld beautifully. Garnish with additional fresh dill before serving. Enjoy chilled for the best taste experience.
