Indulge in the ultimate dessert experience with this Decadent Caramel Brownie Pie. A rich brownie filling layered with gooey caramel, all nestled in a buttery graham cracker crust, this pie is a heavenly treat for any occasion.

Ingredients

For the Crust:

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Brownie Filling:

  • ½ cup unsalted butter
  • ½ cup semi-sweet chocolate chips
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • Pinch of salt
  • ¼ tsp baking powder
  • ½ cup caramel sauce (store-bought or homemade)
  • ¼ tsp sea salt (optional but recommended for balance)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish and set it aside.
  2. Make the Crust:
    1. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
    2. Press the mixture firmly into the pie dish, covering the bottom and sides evenly.
    3. Bake for 8–10 minutes until lightly golden. Let it cool while you prepare the filling.
  3. Brownie Filling:
    1. Melt the butter and chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth.
    2. In a large bowl, whisk sugars, eggs, and vanilla. Stir in the melted chocolate mixture until glossy.
  4. Add Dry Ingredients:
    1. Sift in flour, cocoa powder, baking powder, and salt. Stir until just combined—don’t overmix.
  5. Layer with Caramel:
    1. Spread half the brownie batter in the cooled crust.
    2. Drizzle caramel sauce evenly over the batter. Optionally, sprinkle sea salt for a salted caramel flavor.
    3. Gently spread the remaining brownie batter on top.
  6. Bake:
    1. Bake for 25–30 minutes until the edges are set and the center is fudgy. A toothpick inserted in the center should come out with moist crumbs, not wet batter.
  7. Cool & Serve:
    1. Cool for 15–20 minutes before slicing for neater pieces—or dig in warm for lava-like indulgence.
    2. Serve with vanilla ice cream or a drizzle of caramel.

Notes

  • For an extra decadent touch, top each slice with a dollop of whipped cream.
  • Store any leftovers in the refrigerator for up to 3 days.
