Crockpot Sweet and Sour Chicken made with apricot preserves, soy sauce, and rice vinegar. This slow cooker recipe is incredibly easy to make and tastes just like takeout. Serve over rice for a delicious weeknight dinner.

Ingredients

Chicken:

  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces

Sauce:

  • 18 oz apricot preserves
  • 1/2 cup soy sauce
  • 2 tablespoons rice vinegar

Optional Toppings:

  • Sliced green onions
  • Sesame seeds

Instructions

  1. Add chicken pieces: Place the chicken in the slow cooker.
  2. Mix sauce: In a bowl, mix apricot preserves, soy sauce, and rice vinegar.
  3. Pour sauce: Pour the sauce over the chicken in the slow cooker.
  4. Cook: Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  5. Serve: Serve over rice, and top with green onions and sesame seeds.

Notes

  • Try pineapple preserves for a different flavor.
  • To thicken sauce, mix 3 tbsp cornstarch with 1/4 cup of sauce until smooth, then stir back in.
  • Store leftovers covered in the fridge for 3-4 days.
  • Slow cooker times may vary; adjust as needed.
