Ingredients
Meatloaf:
2 pounds ground beef
1 small onion, chopped
12 ounces stuffing mix (two 6-ounce boxes, any flavor)
1 ¼ cup milk (2% preferred)
½ tablespoon Worcestershire sauce
½ tablespoon steak seasoning
¼ teaspoon pepper
2 tablespoons mustard, divided
2 large eggs
Barbecue Glaze:
½ cup ketchup
½ cup BBQ sauce
¼ cup brown sugar
Parsley for garnish
Instructions
Prepare Meatloaf: In a large mixing bowl, combine ground beef, onion, stuffing mix, milk, Worcestershire sauce, steak seasoning, pepper, 1 tablespoon of mustard, and eggs. Mix well and shape into a loaf.
Cook Meatloaf: Place the loaf in a slow cooker. In a bowl, mix ketchup, BBQ sauce, brown sugar, and remaining mustard. Pour half over the loaf. Cook on LOW for 6 hours or HIGH for 3-4 hours.
Glaze and Serve: Before serving, top with remaining glaze. For a caramelized finish, broil the meatloaf briefly. Garnish with parsley and enjoy!
