1–2 Tablespoons olive oil
For the Sauce:
1 ½ cups chicken stock
3 Tablespoons cornstarch
1 cup heavy cream
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon onion powder
1 teaspoon black pepper, or to taste
½ teaspoon paprika
½ teaspoon salt, or to taste
½ cup sundried tomatoes, drained
4 Tablespoons butter, cut into 4 pats
fresh basil, optional garnish
Instructions
Brown the Chicken: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Brown chicken breasts for about 2 minutes per side.
Prepare the Sauce: In a mixing bowl, whisk together chicken stock and cornstarch until smooth. Add heavy cream, garlic, Italian seasoning, onion powder, black pepper, paprika, and salt.
Assemble: Place browned chicken in the crockpot, pour sauce mixture over it. Top with sundried tomatoes and butter.
Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
