Ingredients

For the Chicken:

  • 2 pounds boneless skinless chicken breasts
  • 12 Tablespoons olive oil

For the Sauce:

  • 1 ½ cups chicken stock
  • 3 Tablespoons cornstarch
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper, or to taste
  • ½ teaspoon paprika
  • ½ teaspoon salt, or to taste
  • ½ cup sundried tomatoes, drained
  • 4 Tablespoons butter, cut into 4 pats
  • fresh basil, optional garnish

Instructions

  1. Brown the Chicken: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Brown chicken breasts for about 2 minutes per side.
  2. Prepare the Sauce: In a mixing bowl, whisk together chicken stock and cornstarch until smooth. Add heavy cream, garlic, Italian seasoning, onion powder, black pepper, paprika, and salt.
  3. Assemble: Place browned chicken in the crockpot, pour sauce mixture over it. Top with sundried tomatoes and butter.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Serve: Garnish with fresh basil and serve warm.
