Ingredients

For the Meatloaf:

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Caramelized Onions:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter

Instructions

  1. Prepare the Meatloaf: In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and pepper. Mix until well combined.
  2. Caramelize the Onions: In a skillet, melt butter over medium heat. Add sliced onions and cook, stirring occasionally, until golden and caramelized, about 20-30 minutes.
  3. Assemble the Meatloaf: Line the bottom of the crockpot with half of the caramelized onions. Form the meat mixture into a loaf shape and place it on top of the onions in the crockpot. Top with the remaining caramelized onions.
  4. Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, until the meatloaf is cooked through.
  5. Add Cheese: In the last 15 minutes of cooking, top the meatloaf with Swiss cheese slices and allow them to melt.
  6. Serve: Slice the meatloaf and serve hot, garnished with any remaining caramelized onions.
