A comforting and easy-to-make CrockPot Chicken Tortellini recipe combining tender slow-cooked chicken, rich marinara sauce, creamy cheese tortellini, and fresh spinach, perfect for a hearty family meal with minimal hands-on time.

Ingredients

Main Ingredients

  • Olive oil spray
  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated

Instructions

  1. Prepare the Slow Cooker: Spray the inside of the crockpot with olive oil spray to prevent sticking.
  2. Add Chicken: Arrange the chicken breasts in a single layer at the bottom of the slow cooker to ensure even cooking.
  3. Add Sauce and Spices: Pour marinara sauce over the chicken, then sprinkle garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes evenly atop.
  4. Cook Chicken: Cover and cook on LOW for about 4 hours until the chicken is tender and fully cooked.
  5. Shred Chicken: Remove chicken breasts and shred them using two forks to create bite-sized pieces.
  6. Mix Chicken with Sauce: Return the shredded chicken to the slow cooker and stir to combine well with the sauce.
  7. Add Tortellini and Dairy: Add the cheese tortellini, shredded mozzarella, and heavy cream to the slow cooker, stirring thoroughly to integrate.
  8. Cook Tortellini: Cover and cook on LOW for an additional 30 minutes, allowing the tortellini to cook through and meld with the sauce.
  9. Add Spinach: Stir in the baby spinach and continue cooking on LOW for another 10 minutes, letting the spinach wilt.
  10. Finish and Serve: Sprinkle grated Parmesan cheese on top, taste, and adjust seasoning if necessary before serving.

Notes

  • Use fresh spinach for the best texture and flavor; frozen spinach will add extra moisture.
  • This recipe can be made in advance and stored in the refrigerator for up to 3 days.
  • For a thicker sauce, reduce the amount of chicken broth slightly.
  • Feel free to substitute spinach with kale or Swiss chard.
  • If you prefer a spicier dish, increase the red chili flakes to taste.
