Ingredients
Main Ingredients:
1 medium yellow onion, chopped
2 lb boneless skinless chicken breasts or thighs
1/2 cup hot sauce
1 tbsp garlic powder
1 tbsp smoked paprika
1 tsp chipotle chili powder (adjust to taste)
Additional Ingredients:
1 can fire-roasted diced tomatoes
2 poblano peppers, seeded and chopped
1 jalapeño pepper, chopped and seeded if desired
3/4 cup chopped celery
2–4 cups bone or chicken broth
4 tbsp salted butter
Salt and black pepper to taste
1/2 cup plain Greek yogurt or cream cheese, melted
1/2 cup fresh cilantro, chopped
Avocado, cheddar cheese, and Greek yogurt for serving
Instructions
Crockpot Method: In the crockpot, combine all main ingredients and 2 cups of broth. Cook on low for 5-6 hours or high for 3-4 hours. Shred chicken, stir in cream cheese/yogurt and cilantro.
Stove Method: In a Dutch oven, combine main ingredients and 2 cups of broth. Simmer for 15 mins on low, shred chicken, add cream cheese/yogurt and cilantro. Simmer until ready to serve.
Ladle chili into bowls, top with desired toppings, and enjoy!
