Ingredients

Main Ingredients:

  • 1 medium yellow onion, chopped
  • 2 lb boneless skinless chicken breasts or thighs
  • 1/2 cup hot sauce
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tsp chipotle chili powder (adjust to taste)

Additional Ingredients:

  • 1 can fire-roasted diced tomatoes
  • 2 poblano peppers, seeded and chopped
  • 1 jalapeño pepper, chopped and seeded if desired
  • 3/4 cup chopped celery
  • 24 cups bone or chicken broth
  • 4 tbsp salted butter
  • Salt and black pepper to taste
  • 1/2 cup plain Greek yogurt or cream cheese, melted
  • 1/2 cup fresh cilantro, chopped
  • Avocado, cheddar cheese, and Greek yogurt for serving

Instructions

  1. Crockpot Method: In the crockpot, combine all main ingredients and 2 cups of broth. Cook on low for 5-6 hours or high for 3-4 hours. Shred chicken, stir in cream cheese/yogurt and cilantro.
  2. Stove Method: In a Dutch oven, combine main ingredients and 2 cups of broth. Simmer for 15 mins on low, shred chicken, add cream cheese/yogurt and cilantro. Simmer until ready to serve.
  3. Ladle chili into bowls, top with desired toppings, and enjoy!

Notes

  • Add extra buffalo sauce for more heat
  • Serve with tortilla chips for a crunchy texture
