  • 0.5 cup cornmeal
  • 0.5 cup panko breadcrumbs or regular breadcrumbs

  • to taste black pepper

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Soak the Squash: Place the sliced squash in a shallow dish and pour buttermilk over them. Let them soak for 5-10 minutes.
  3. Prepare the Coating: In another dish, mix cornmeal, panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dredge the Squash: Remove squash slices from the buttermilk, coat them in the breadcrumb mixture, and place them on the baking sheet.
  5. Bake: Bake the squash slices for 20-25 minutes, flipping halfway through, until golden brown and crispy.
