A delicious and easy recipe for making crispy corned beef using either the oven or slow cooker method. The meat is seasoned with a flavorful mix of spices, mustard, garlic, and brown sugar, then cooked low and slow until tender and crispy on the outside.

Ingredients

Corned Beef:

  • 3 to 4 pounds corned beef (with spice packet)
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic (finely minced)
  • 3 tablespoons brown sugar
  • ½ teaspoon black pepper (coarse ground)
  • ½ teaspoon fennel seeds

Cooking Liquid:

  • 1 cup apple juice (or apple cider)
  • 2 tablespoons apple cider vinegar

Instructions

  1. Season the Corned Beef – Remove meat from the package, rinse off the brine, and pat dry. Discard the excess brine. Crush the spices and mix with garlic, brown sugar, pepper, and fennel. Rub mustard on the beef, then spread the seasonings on top.
  2. Oven Instructions – Preheat oven to 325°F. Pour apple juice and vinegar into a roasting pan. Add seasoned beef, cover, and roast for about 50 minutes per pound until tender.
  3. Slow Cooker Instructions – Pour juice and vinegar into the slow cooker. Add seasoned beef, cook on low for 6-8 hours.
  4. Finishing Touch – Before serving, broil the beef for 5-6 minutes to caramelize and crisp the top.
