Ingredients

For the Soup:

  • 3 tablespoons butter
  • ½ onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups mushrooms, sliced (cremini, button, or a mix)
  • ¼ cup all-purpose flour
  • 2 cups vegetable broth
  • 2 cups heavy cream
  • 1 teaspoon thyme (fresh or dried)
  • Salt and black pepper, to taste

Optional Garnish:

  • Chopped parsley

Instructions

  1. Sauté Aromatics: In a large pot, melt butter over medium heat. Add onions and garlic, sauté until softened.
  2. Add Mushrooms: Stir in the sliced mushrooms and cook until they release their juices.
  3. Thicken: Sprinkle the flour over the mushrooms, stir well, and cook for a couple of minutes.
  4. Add Liquid: Pour in the vegetable broth and heavy cream. Season with thyme, salt, and pepper. Simmer until slightly thickened.
  5. Blend: Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  6. Serve: Reheat if needed and serve hot, garnished with chopped parsley.
