This smoky and creamy Chipotle Mayo is a perfect blend of spicy chipotle peppers, smoky adobo sauce, and tangy lime juice mixed into smooth mayonnaise. It adds a delicious kick to tacos, sandwiches, fries, and more, with an easy-to-make recipe that can be whipped up in minutes and chilled for a rich, flavorful finish.

Ingredients

Chipotle Mayo

  • 1 cup mayonnaise
  • 2 chipotle peppers in adobo sauce (finely minced)
  • 2 tsp adobo sauce (from the can)
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder
  • Pinch salt

Optional for Extra Creaminess

  • 12 tbsp sour cream or Greek yogurt

Instructions

  1. Prepare Chipotle Peppers: Finely mince the chipotle peppers, removing seeds for a milder heat if desired.
  2. Mix Ingredients: In a bowl, whisk together the mayonnaise, minced chipotle peppers, adobo sauce, fresh lime juice, garlic powder, and a pinch of salt until well combined.
  3. Adjust Flavor: Taste the mixture and adjust the heat by adding more chipotle or adobo sauce, or add more lime juice to balance the flavor as preferred.
  4. Optional Creaminess: For an extra creamy texture, gently fold in 1 to 2 tablespoons of sour cream or Greek yogurt until smooth.
  5. Chill: Cover and chill the mayo in the refrigerator for 20 to 30 minutes before serving to allow flavors to meld.

Notes

  • Remove seeds from chipotle peppers for milder heat.
  • Store in an airtight jar in the refrigerator for 5 to 7 days.
  • Perfect as a condiment for shrimp tacos, cheeseburger tacos, loaded fries, grilled chicken sandwiches, and fish tacos.
  • Add sour cream or Greek yogurt to soften the flavor and create a smoother texture.
