Creamy Chicken and Rice Soup is a comforting and hearty dish that is perfect for a cozy night in. This recipe combines tender chicken, aromatic vegetables, creamy broth, and fluffy rice for a delicious and satisfying meal.

Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 stick celery, chopped finely
  • 2 medium carrots, peeled & chopped finely
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 3/4 cup uncooked white jasmine rice
  • 1 cup heavy/whipping cream
  • 1 pound uncooked chicken breasts, cut into bite-size pieces/strips
  • Salt & pepper, to taste

Instructions

  1. Add the Vegetables: Heat olive oil in a soup pot over medium-high heat. Sauté celery, carrots, and onion for 5-7 minutes, stirring occasionally.
  2. Prepare the Base: Add garlic and flour, cook for about a minute.
  3. Add Broth: Slowly pour in the chicken broth, stirring to dissolve flour.
  4. Simmer: Stir in Italian seasoning, rice, and cream. Simmer covered for 10 minutes.
  5. Finish the Soup: Add chicken, cook for 7-10 minutes until cooked. Season with salt and pepper to taste.

Notes

  • This soup thickens upon standing, add more broth as needed.
  • For a thinner consistency, adjust the amount of rice or broth.
