This vibrant Thai Chicken Soup combines tender chicken with fragrant lemongrass, ginger, and a hint of coconut milk for a delicious and comforting meal perfect for cold nights or a taste of the tropics.

Ingredients

For the Soup:

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 can (14 oz) coconut milk
  • 1 stalk lemongrass, smashed
  • 2 inches fresh ginger, sliced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine chicken broth, coconut milk, lemongrass, and ginger. Bring to a simmer. Once simmering, add the diced chicken, bell pepper, and mushrooms. Cook until chicken is fully cooked, approximately 15 minutes.
  2. Stir in fish sauce and lime juice. Serve hot, garnished with fresh cilantro.
