Country Apple Fritter Bread is a moist and tender quick bread filled with chopped apples, cinnamon sugar, and topped with a sweet glaze. Perfect for breakfast, dessert, or a cozy snack.

Ingredients

For the Cinnamon-Sugar Mix:

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon

For the Bread:

  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk

For the Apple Mixture:

  • 2 apples, peeled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 1 to 3 tablespoons milk or cream

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Prepare the Cinnamon-Sugar Mix: Mix 1/3 cup brown sugar with 1 teaspoon cinnamon in a small bowl; set aside.
  3. Prepare the Apple Mixture: Toss chopped apples with 2 tablespoons sugar and 1 teaspoon cinnamon in another bowl; set aside.
  4. Make the Batter: Cream 2/3 cup sugar and softened butter until smooth. Add eggs one at a time, then stir in vanilla extract. In a separate bowl, whisk together flour and baking powder. Gradually add the flour mixture to the creamed mixture, alternating with milk, until just combined.
  5. Layer and Bake: Pour half of the batter into the loaf pan. Layer half the apple mixture over it, then sprinkle half the brown sugar-cinnamon mix. Repeat with remaining batter, apples, and brown sugar mix. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  6. Glaze and Serve: Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Mix powdered sugar with milk or cream for the glaze, then drizzle over the cooled bread.
