Coconut Lime Fish with Garlic Butter is a tropical-inspired dish that combines the flavors of coconut, lime, and garlic-infused butter to create a delicious and light seafood meal. Perfect for a quick weeknight dinner or a special weekend treat!

Ingredients

Fish:

  • 4 6-ounce white fish fillets (such as tilapia, cod, or mahi-mahi)

Coconut Lime Marinade:

  • 1 cup coconut milk
  • Zest and juice of 2 limes
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Garlic Butter:

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • Lime wedges for serving

Instructions

  1. Prepare the Coconut Lime Marinade: In a medium bowl, whisk together coconut milk, lime zest, lime juice, honey, salt, black pepper, and red pepper flakes (if using).
  2. Marinate the Fish: Place the fish fillets in a shallow dish and pour the coconut lime mixture over them. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Cook the Fish: Preheat your grill or a skillet over medium-high heat. Remove the fish from the marinade and cook for about 4-5 minutes on each side, or until cooked through.
  4. Make the Garlic Butter: While the fish is cooking, melt the butter in a saucepan, add minced garlic, and sauté until fragrant.
  5. Finish and Serve: Once the fish is done, drizzle the garlic butter over the fillets and serve immediately, garnished with fresh cilantro and lime wedges.

Notes

  • For a spicier kick, add sliced jalapeños to the marinade.
  • Substitute the white fish with shrimp or scallops for a different seafood experience. Adjust cooking time as necessary.
