These Chocolate Raspberry Crumb Bars combine the richness of chocolate with the tartness of raspberries, topped with a crunchy crumb topping for the perfect balance of flavors and textures.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup granulated sugar
  • ¾ cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ cups fresh raspberries
  • ½ cup semi-sweet chocolate chips
  • 2 tbsp raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the flour, oats, sugar, baking powder, and salt. Add the softened butter, egg, and vanilla extract. Mix until the dough comes together; it should be crumbly but hold together when pressed.
  3. Set aside about 1 cup of the crumb mixture for the topping, and press the remaining dough into the bottom of the prepared baking pan to form a crust.
  4. In a separate bowl, mix the raspberries with the raspberry jam, then gently spread this raspberry mixture over the crumb crust in the pan.
  5. Sprinkle the semi-sweet chocolate chips evenly over the raspberry layer.
  6. Crumble the remaining dough over the top to create a crumbly topping.
  7. Bake for 35-40 minutes, or until the bars are golden brown and a toothpick comes out clean when inserted into the center.
  8. Let the bars cool in the pan for at least 30 minutes before cutting into squares.

Notes

  • These bars can be stored in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
  • If you’d like a dairy-free version, substitute the butter with dairy-free butter or coconut oil.
  • You can substitute the raspberries with other berries such as strawberries, blackberries, or blueberries for a different flavor.
  • For an extra crunch, add chopped nuts like almonds or walnuts to the crumb mixture or sprinkle them on top before baking.
