A comforting and hearty Chicken Noodle Soup recipe that is perfect for chilly days or when you’re feeling under the weather. This homemade soup is filled with tender chicken, vegetables, and egg noodles in a flavorful broth.

Ingredients

Vegetables:

  • 2 tablespoons olive oil (or butter)
  • 3 ribs celery (diced)
  • 3 large carrots (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)

Soup Base:

  • 10 cups chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper (to taste)

Noodles and Chicken:

  • 4 cups dry egg noodles
  • 3 cups rotisserie chicken meat (or cooked chicken breasts)

Instructions

  1. Heat the olive oil: In a large pot over medium-high heat.
  2. Saute vegetables: Add celery, carrots, onions, and garlic, and saute for 6-7 minutes until softened.
  3. Add broth and seasonings: Pour in chicken broth, Italian seasoning, salt, and black pepper. Bring to a boil, then simmer gently.
  4. Cook noodles and chicken: Add egg noodles to the pot and cook for 8-10 minutes until al dente. If using raw chicken breast, add it with the noodles. Once cooked, remove and chop into pieces. Stir in chicken meat before serving.
