Ingredients

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments

  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until fully cooked through and no longer pink inside. Remove and let rest before slicing thinly.
  2. Prepare the Avocado and Cheese: While the chicken rests, slice the avocado and prepare the cheese slices. Set both aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each bread slice to add flavor and moisture.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add red onion and tomato slices on top. Cover with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add a small amount of butter or olive oil. Place sandwiches in the skillet and cook for 3-4 minutes per side until the bread is golden brown and cheese melts. Press gently with a spatula for even melting.
  6. Serve: Remove sandwiches from the skillet and allow them to cool slightly. Slice in half and serve warm for a delicious, satisfying meal.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safety.
  • Choose a sturdy bread like sourdough or ciabatta to hold the fillings well without becoming soggy.
  • Substitute mayonnaise with Greek yogurt for a lighter option.
  • To add extra flavor, sprinkle some fresh herbs like cilantro or basil in the sandwich.
  • Avocado can brown if made ahead; squeeze lemon juice on slices to prevent discoloration.
