Hearty and delicious, this cheesy potato casserole is loaded with hash browns smothered in a creamy cheese mixture that’s full of flavor. Perfect for a comforting side dish or potluck contribution.

Ingredients

Casserole:

  • 1 can cream of chicken soup
  • ½ cup butter, melted
  • 1 tablespoon garlic salt
  • Salt and pepper, to taste
  • ½ cup onions, chopped
  • 2 cups sour cream
  • 2 cups cheddar cheese, shredded
  • 2 pounds frozen hash browns, partially thawed

Topping:

  • 2 cups cornflakes, crushed
  • ¼ cup butter, melted

Instructions

  1. Preheat oven to 350°F. Spray a 9×13 pan with nonstick spray.
  2. In a medium bowl, combine the soup, ½ cup melted butter, garlic salt, salt and pepper, chopped onions, sour cream, and cheddar cheese.
  3. Place the hash browns in a large bowl. Pour the soup mixture over the hash browns and stir until well combined.
  4. Pour into prepared pan.
  5. Combine the crushed cornflakes and melted butter, and sprinkle evenly over the top of the casserole.
  6. Bake for 45 to 55 minutes.

Notes

  • Double this recipe when you are serving a larger crowd on special occasions or at family gatherings.
  • You can put this together the night before, cover it well, and put it in the fridge. Before baking, uncover and let sit on the counter for 30 minutes.
  • Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to check your casserole at the lower end of the recommended baking time.
