Instructions

  1. Cook the beef and onions: In a large skillet over medium heat, heat the cooking oil. Add the ground beef and chopped onions and cook until the beef is fully browned with no pink remaining. Drain any excess grease and return the beef and onions to the skillet.
  2. Add broth, rice, and seasonings: Stir in the low-sodium beef broth, uncooked rice, tomato paste, onion powder, garlic powder, chili powder, salt, cumin, oregano, and black pepper until fully combined.
  3. Simmer to cook rice: Bring the mixture to a boil, then cover the skillet and reduce heat to a simmer. Let it cook for 20 to 25 minutes or until the rice is tender and cooked through.
  4. Top with cheese: Remove the skillet from heat and uncover. Sprinkle the shredded sharp cheddar cheese evenly on top. Replace the lid and allow the residual heat to melt the cheese.
  5. Serve warm: Serve the casserole hot alongside your favorite side dishes.
