Cheeseburger Soup is a comforting and creamy dish packed with potatoes, vegetables, ground beef, and Velveeta cheese. It offers all the delicious flavors of a cheeseburger in a hearty soup form.

Ingredients

Main Ingredients:

  • 2 tbsp cooking oil
  • 2 stalks celery, chopped (~1 cup)
  • 1 large carrot, shredded (~½ cup)
  • ½ onion, chopped (~1 cup)
  • 1 pound ground beef
  • 1½ tsp garlic salt
  • 1 tsp Italian seasoning
  • 4 cups beef broth
  • 3 red potatoes, chopped into 1-inch cubes (~3 cups)
  • ¾ cup heavy cream
  • 34 tbsp cornstarch
  • 12 oz Velveeta cheese, cubed
  • ½ cup plain sour cream

Instructions

  1. Sauté Vegetables: Heat oil in a large saucepan, sauté celery, carrots, and onion until almost soft.
  2. Cook Ground Beef: Add ground beef, cook until no longer pink.
  3. Season and Simmer: Drain grease, season with garlic salt and Italian seasoning. Add beef broth and potatoes, simmer until potatoes are tender.
  4. Thicken Soup: Whisk cornstarch with heavy cream, add to soup and stir until thickened.
  5. Add Cheese: Stir in Velveeta until melted. Remove from heat, mix in sour cream.
  6. Serve: Ladle into bowls and serve warm.
