Ingredients

For the Quesadillas:

  • 1 pound ground beef or turkey
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 teaspoons dried minced onions
  • Salt and pepper to taste
  • 1 teaspoon olive oil or butter (may need for each quesadilla)
  • 8 8-inch tortillas
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup diced pickles

For the Burger Sauce:

  • 1/2 cup mayo
  • 2 tablespoons ketchup
  • 2 tablespoons pickle relish
  • 12 teaspoons sweetener or sugar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon vinegar
  • 1/4 teaspoon mustard
  • Salt and pepper to taste

Instructions

  1. Mix the Meat Mixture: In a mixing bowl, combine ground beef or turkey with Worcestershire sauce, smoked paprika, onion powder, garlic powder, dried minced onions, salt, and pepper.
  2. Cook the Meat: Heat olive oil or butter in a non-stick skillet over medium heat. Cook the meat mixture until browned and fully cooked (6–8 minutes).
  3. Prepare the Quesadillas: On half of each tortilla, spread the cooked meat mixture and sprinkle with cheese and pickles. Fold over to create a half-moon shape.
  4. Cook the Quesadillas: In the same skillet, add more oil if needed. Cook each folded quesadilla until golden brown on both sides (3–4 minutes per side).
  5. Make the Burger Sauce: Mix mayo, ketchup, pickle relish, sweetener, paprika, onion powder, vinegar, mustard, salt, and pepper until smooth.
