Cheddar Sour Cream Macaroni Salad is a creamy and flavorful dish featuring ziti pasta mixed with a blend of sour cream, mayonnaise, fresh vegetables, and chunks of cheddar cheese. Perfect for picnics, potlucks, or as a side dish for any occasion.

Ingredients

Pasta:

  • 1 lb. box of Ziti Pasta

Dressing:

  • 1.5 cups of Mayonnaise
  • 1/4 cup of Sour Cream
  • 2 teaspoons of White Sugar

Veggies:

  • 1 Red Bell Pepper
  • 1 medium sized Red Onion
  • 1 large Carrot
  • 2 stems of Celery
  • 2 tablespoons of diced Pimientos with the liquid

Seasonings:

  • 2 teaspoons of Celery Salt
  • 2 teaspoons of Celery Seed

Additions:

  • 1 bunch of fresh Parsley *optional
  • 1 lb. block of your favorite Cheddar Cheese

Instructions

  1. Boil the Pasta: Cook ziti pasta to al dente, rinse with cold water, and drain.
  2. Prepare Vegetables: Dice onion, bell pepper, and celery finely. Add diced pimientos, grated carrot, and season with celery salt and celery seed.
  3. Make Dressing: Whisk together sour cream, mayonnaise, and sugar. Optionally add celery salt and celery seed.
  4. Combine Ingredients: Mix vegetables with dressing, then add cooked pasta. Fold in diced cheese.
  5. Chill: Allow the salad to sit for 15 minutes before serving. For best flavor, refrigerate for 4 to 6 hours or overnight.

Notes

  • You can customize this salad by adding other vegetables like peas, corn, or olives.
  • To make it more tangy, add a splash of vinegar or lemon juice to the dressing.
