These crispy zucchini garlic bites are a delightful appetizer featuring grated zucchini, breadcrumbs, garlic, herbs, and Parmesan cheese, baked to golden perfection. Perfect for dipping in marinara or ranch sauce.

Ingredients

Zucchini Garlic Bites:

  • 2 cups grated zucchini (about 2 medium), excess moisture squeezed out
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • ¼ cup finely chopped onion
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • Cooking spray or olive oil (for baking)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
  2. Mix Ingredients: In a large bowl, combine zucchini, breadcrumbs, Parmesan, eggs, garlic, onion, parsley, salt, pepper, and Italian seasoning if using. Mix until fully combined.
  3. Form Balls: Shape the mixture into 1 to 1½-inch balls and place them on the baking sheet.
  4. Bake: Bake for 20–25 minutes, turning halfway through, until golden brown and slightly crisp.
  5. Cool and Serve: Allow to cool slightly before serving. Enjoy warm with marinara sauce, ranch, or preferred dip.

Notes

  • Squeeze zucchini well to avoid soggy bites
  • Try panko for extra crunch
  • Add cheese or herbs to customize the flavor
  • Great for make-ahead and freezer prep
  • Serve warm for best texture and taste
