Stuffed with carrot cake and cheesecake filling and coated with white chocolate, these 4-ingredient creamy carrot cake cheesecake bites are the perfect way to welcome fall.

Ingredients

For the Cheesecake Bites:

  • 15.25 ounce boxed carrot cake mix
  • 8 ounces cream cheese, room temperature

For Coating:

  • 12 ounces white/vanilla candy melts
  • 4 ounces orange candy melts

Instructions

  1. Heat Treat Cake Mix: Microwave dry cake mix in two 30-second intervals, stirring in between. Allow to cool.
  2. Prepare Cream Cheese Filling: Beat cream cheese until smooth.
  3. Mix Cake Mix: Sprinkle cooled cake mix into cream cheese, mix until incorporated.
  4. Chill: Cover mixture, chill for 2 hours.
  5. Form Cheesecake Bites: Scoop dough, roll into balls, place on baking sheet.
  6. Coat with White Chocolate: Melt white candy melts, coat cheesecake bites, tap off excess.
  7. Drizzle with Orange Chocolate: Melt orange candy, drizzle over coated bites.
  8. Chill: Refrigerate until ready to serve.
