Ingredients

Sugar Mixture:

  • 1 cup granulated sugar
  • 1/4 cup water

Caramel Sauce:

  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla
  • Pinch of salt

Instructions

  1. Sugar Preparation: Add the sugar and water to a 3-quart heavy bottomed saucepan; stir to create an even layer.
  2. Warm the pot over medium heat until the sugar dissolves, turns clear, and begins to bubble (approximately 3-4 minutes).

    (Avoid stirring once the sugar starts to bubble; instead, swirl the pan occasionally and brush down any sugar crystals on the sides.)

    Continue cooking until the mixture thickens and transforms into a deep amber color, similar to honey (approximately 8-12 minutes).

  3. Caramel Sauce: Carefully add the butter and whisk until melted (be cautious as the mixture will bubble up).
  4. Remove from heat and slowly pour in the cream while whisking continuously until well combined.
  5. Whisk in the vanilla and salt.
  6. Allow the sauce to cool in the pan for 10 minutes, then transfer to a lidded glass jar to cool completely.
  7. Store in the refrigerator for up to 3 weeks or freeze for up to 2 months. Reheat as needed in the microwave.
