These Butterbeer Cookies are a magical treat inspired by the famous wizarding beverage. Rich with butterscotch and white chocolate, these cookies are perfect for any Harry Potter fan or dessert lover.

Ingredients

Cookie Dough:

  • 1 cup butter or margarine, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 (5.1 oz) box butterscotch instant pudding mix
  • 2 3/4 cups all-purpose flour

Additional Mix-Ins:

  • 1 cup butterscotch chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Mix Wet Ingredients: In a stand mixer with paddle attachment, cream together butter, sugar, and brown sugar. Add eggs and vanilla.
  3. Combine Dry Ingredients: In a separate bowl, whisk together salt, baking soda, and butterscotch pudding mix. Add to the wet mixture, then slowly mix in the flour.
  4. Add Mix-Ins: Using a wooden spoon, fold in butterscotch chips and white chocolate chips until evenly distributed. Chill the dough in the fridge for 15-20 minutes.
  5. Bake: Drop spoonfuls of dough onto a greased baking sheet and bake for 7-9 minutes, or until lightly golden. Transfer to a cooling rack.
