Breakfast Grilled Cheese with Eggs

A delicious twist on classic grilled cheese by adding perfectly cooked eggs. Creamy, satisfying, and ideal for a hearty breakfast.

Ingredients

  • 2 slices of thick-cut sourdough or whole wheat bread
  • 2 slices of cheese (cheddar, American, gouda, or pepper jack)
  • 1 egg
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Butter one side of each bread slice.
  3. Place a slice of cheese on the unbuttered side of one slice of bread.
  4. Crack an egg over the cheese and season with salt and pepper.
  5. Add another slice of cheese over the egg.
  6. Top with the second slice of bread, buttered side facing out.
  7. Grill the sandwich, pressing gently, until the bottom is golden brown (about 2–3 minutes).
  8. Carefully flip and cook another 2–3 minutes, until the cheese is melted and the egg is cooked to your liking.
  9. Remove from skillet, let rest for a minute, then slice in half and serve immediately.

Notes

  • Swap cheddar for pepper jack or spread avocado/cream cheese for variety.
  • Include spinach or tomato slices for freshness.
  • Make it open-faced and broil for a bubbly top.
