These Blueberry Pie Bombs are a delightful twist on classic blueberry pie, with a sweet cream cheese filling wrapped in biscuit dough and coated in cinnamon sugar. They are perfect for a quick and easy dessert that will impress your family and friends.

Ingredients

Biscuit Dough:

  • 1 can (16.3 oz) refrigerated biscuit dough (8-count)

Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Blueberry Pie Filling:

  • 1 cup blueberry pie filling

Cinnamon Sugar Coating:

  • ¼ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or silicone mat.
  2. In a bowl, blend cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Separate biscuit dough into 8 rounds. Flatten each to a 4-inch circle.
  4. Add 1 tsp cream cheese mixture and a spoonful of blueberry pie filling to the center of each dough circle.
  5. Bring edges over the filling and pinch to seal tightly into a ball. Place seam-side down on the baking sheet.
  6. Bake for 13–16 minutes or until golden and cooked through.
  7. While baking, mix cinnamon and sugar in a small bowl. Once bombs are slightly cooled, brush with melted butter and roll in cinnamon-sugar mixture until coated.
  8. Serve warm, optionally with vanilla ice cream.
